Arctic Cuisine Experience

The best souvenirs are always the ones that you can share and the ones that last. So, instead of just cooking Arctic cuisine for you, we’ll teach you how to cook them for your friends and family back home! We’ll be using some ingredients grown right in our Polar Garden for an even more unique experience.

Benjamin Vidmar, the founder of Polar Permaculture, will be with you from getting some of the ingredients at the local shop all the way to answering questions you may have as we eat the food that we just cooked. He is a longtime chef and longtime resident of Svalbard and holds a vast amount of knowledge regarding the area, cooking, and of course, Permaculture. Also, after purchasing the food from the Butikken, he will walk with you up to our kitchen and give you a short tour of the town along the way.

The Meal

A three-course meal featuring the flavors of the arctic is carefully prepared by our chef in order to give you a true taste of the Arctic. Here’s a sample meal courtesy of our chef:


BBQ Whale
Served with Cloud berry Jam, locally grown salad, and Flat bread


Reindeer Stew
Served with garlic mashed potatoes, and marinated lingonberries


Brown Cheese Pudding
Served in a chocolate cup with forest berry compote

About the Chef

Benjamin Vidmar arrived in Svalbard in 2008 and has been a chef on the archipelago ever since. Before that, he was a chef in the United States, Malaysia, and even Antarctica. He currently works at the Svalbard Hotell (yes, with two l’s) and has been serving up smiles on a regular basis. We hope that after this experience, you too might be able to do the same and give your friends and family a taste of the Arctic.
